아몬드와 초콜렛 비스코티 만들기 Biscotti....

Biscotti 만들기

커피와 먹으면 제격인 이태리의 대표적 쿠키인 비스코티 레세피를 올립니다.

 

 

Ingredients

 

For Biscotti:

6 tbs. unsalted butter, at room temperature

1/2 cup granulated sugar

1 tbs grated lemon zest

2 large eggs

1 tsp vanilla extract

2 cups all-purpose flour

2 tsp baking powder

1/4 tsp salt

1 cup roasted sliced almonds or chopped pistachios

 

For the lemon icing:

2 cups sifted confectioners' sugar

1 tsp grated lemon zest

1/4 cup lemon juice

 

1. Preheat oven to 375 deg. F.

2. Beat the butter, sugar and lemon zest.

3. Add the eggs, one at a time and beat well.

4. Stir in vanilla.

5. In a small bowl, combine the flour, baking powder and salt.

6. Add to the butter mixture and blend well.

7. Stir in nuts   ( The dough will be soft.)

 

8. on a lightly floured surface, divide the dough in half.

9. Lightly flour each piece and shape it into a log

   about 3cm diameter and 25 cm long.

10. Place the logs about 6cm apart on ungreased sheets.

11. Press each log down to make it 2cm thick and 8cm wide.

 12. Bake until puffed, about 20 minutes.

13. Cool 10 min.

14. Using a sharp knife, cut each log into 2 cm thick slices.

15. Place the Cookies, cut side down, on the baking sheet.

16. BAke 10 minutes.

17. Remove from the oven, then turn each cookie over,

18. Bake the cookies 10 min. more.

19. Transfer them to wire racks to cool.

 

 

To make icing:
1. Combine the sugar, lemon zest and lemon juice and beat until smooth.

2. Beat in additional drops of lemon juice if necessary.

3. Dip one end of each biscotti in the icing.

4. Place on a wire rack, until the icing sets.

 

Makes about 30 biscotti
